Matcha whisk (chasen) - traditional tool for perfect foam
The chasen is the heart of every genuine matcha preparation. This delicate tool is traditionally made from a single piece of bamboo and cut into numerous fine prongs by hand in a time-consuming process. Only with a chasen (100 prongs) can the fine matcha powder be whisked properly so that it is completely dispersed in the water and a creamy, even foam is created - the sign of a well-prepared matcha. The right technique - Z-stroke movement
To whisk the matcha optimally, the whisk is not moved in a circular motion, but in a quick Z-shaped movement - i.e. back and forth in diagonal lines, similar to the letter "Z". This technique prevents lumps, brings air into the drink and creates the characteristic head that makes the taste particularly mild and full-bodied.
It is important that you do not press the broom too deeply into the bowl - the tines should only glide gently over the floor. A loose wrist and an upright grip support the movement. After around 15-20 seconds, a fine, dense foam should have formed - the sign of perfect matcha.
A tool with meaning
In the Japanese tea ceremony ("Chanoyu"), the chasen has a deeply rooted symbolic meaning. It stands for mindfulness, respect for the craft and the connection between man and nature. Each stroke of the broom is part of a centuries-old ritual that is supposed to lead to inner peace.
After use, it is advisable to clean the broom with warm water and leave it to dry on a suitable holder (kusenaoshi) so that it retains its shape and function in the long term.
